On the island of Madagascar in the heart of the Indian Ocean off the east coast of Africa the Mangaro plantation flourishes on the land of a former mango tree forest in the rich valley of the river Sambirano. There the Ramanandraibe family has been growing fine Trinitario cacao known for the light colour and tangy aromas of its beans since 1927.
Michel Cluizel’s emphasis on perfection starts at the plantation where he insists on only the highest standards of production. No pesticides, no emulsifiers and the exclusive use of sugar cane, cocoa butter and Bourbon Vanilla are a few of the specified standards Michel Cluizel undertakes to meet.
Manufacturer’s notes
A refined dark milk chocolate made with 50% cocoa from the Mangaro plantation in the northwest of Madagascar. A strong smooth flavoured chocolate is highlighted by cacao notes which are reminiscent of exotic fruit and caramel.
Aromas – Butter, toffee, rye bread, currants, aromas of ferments
Flavours – Initially, salted butter toffee. Core notes of black honey, cappuccino and ryebread. Finishing with a hint of currants, butter coffee cream and crème brulee.
Tasting Notes
Dark caramel colour with hues of hazelnuts immediately signals this is a serious milk chocolate. With 50% cacao content the anticipation of more than the standard milk chocolate flavours is not in vain although the gentle chocolate and milk aromas fail to portray complexity. A soft snap leads to a smooth, silky, almost oily texture. That this is an exciting milk chocolate is evident in the complexity and intensity of flavours of hazelnuts, boysenberry, honey, zesty lime and butterscotch. The ride culminates in a dry finish with lingering pepper and raisin notes.
