Santander Milk Chocolate 36% Cacao – Single Origin Milk Chocolate from Columbia 70g (8 squares)

Single Origin milk chocolate from Santander State in eastern Columbia it is produced from a mix of fine Criollo and Trinitario cacaos. Cacao beans are sourced from estates in the municipalities of San Vincente de Chucuri, El Carmen, Rionegro and Landazuri where more than 12,000 local farmers have been growing cacao on a commercial basis for more than two centuries. The beans are harvested and handled according to traditional practices that include sun drying of the beans on wooden boards.

Manufacturer’s notes

Santander describes this bar as containing milk from grazing cattle. It displays predominant dairy notes, with flavours of nuts, accords of flowers and fruits, generating a rich combination reminiscent of milk caramel. It has a soft consistency on the palate, and the taste of chocolate is gently released to the end. It goes very well with rich sweet or semi-sweet white wines.

Tasting Notes

Many mass produced milk chocolates have cacao contents of as little as 15%, this Santander bar boasts a cacao content of 36% resulting in a depth of flavour not usually encountered when tasting a milk chocolate.  It has large chunky squares of medium brown chocolate reminiscent of hazelnut shells. Strong aromas of marshmallow and vanilla pervade with accents of oak. A clean but soft snap is a prelude to a surge of creamy melting. Immediately, a heavy sweetness is evident with flavours of vanilla predominant and tones of caramel. Further notes of honey, butterscotch, cafe latte, and nougat are apparent. Intense they may be, however a clean short finish ensures they do not linger on the palate.
