On the island of Madagascar in the heart of the Indian Ocean off the east coast of Africa the Mangaro plantation flourishes on the land of a former mango tree forest in the rich valley of the river Sambirano. There the Ramanandraibe family has been growing fine Trinitario cacao known for the light colour and tangy aromas of its beans since 1927.
Michel Cluizel’s emphasis on perfection starts at the plantation where he insists on only the highest standards of production. No pesticides, no emulsifiers and the exclusive use of sugar cane, cocoa butter and Bourbon Vanilla are a few of the specified standards Michel Cluizel undertakes to meet.
Manufacturer’s notes
This award winning chocolate bar is made using cocoa exclusively from the Mangaro plantation in the northwest of Madagascar. The chocolate is rich, with notes that are reminiscent of exotic fruit and citrus.
Aromas – acidulated mango and passionfruit, gingerbread, currants, orange blossom honey.
Flavours – Initially, wooded spicy incense, cinnamon and pepper followed by core notes of gingerbread. Finishing with passionfruit and zest of citrus.
Tasting Notes
The distinctive flavours of Madagascar shine through in Mangaro Noir. Deep dark brown squares of immaculately presented chocolate emanate seductive aromas of roasted hazelnuts and sweet tobacco. A subdued snap precedes an intensely creamy smooth rush of chocolaty melt. Intense and complex, it displays citrusy, lemony and sarsparilla flavours amongst a background of whisky sour, red currant, roasted glaze and hint of lingering smoky peaty flavours.
